VINIFICATION AND REFINING
In the ancient Travalda estate, name dating back to Roman times, is located the headquarter of the Castellani winery and the vineyard that bears the name of the “Bordelaise blend”. The vineyard is cultivated with organic practices. The grapes are hand-picked and selected in crates. They are then vinified blending all the different varietals in stainless steel tanks at controlled temperature. Maceration with skins for 20 days and delestage every three days. The malolactic fermentation takes place in barrique by 225Lt. After minimum 18 months in barrique the wine is bottled with no filtration and continues its refining in bottle for at least 6 months.
TASTING NOTES
Colour: Intense ruby red colour.
Bouquet: Extraordinary floral components with intense notes of geranium and jasmine, red berries, toasted coffee, chocolate and spices.
Flavour: Medium bodied with silky tannins.
FOOD PAIRINGS
Ideal with all Mediterranean dishes, roast, game meat and spicy cheese.
Service Temperature: 18-20°C.

The label is inspired by the work of the artist Caterina Sbrana “On landscape with vine black”, an ancient pigment that she obtained from the vine shoots collected in the vineyards around the Art Foundation "Materia Prima".
