Vinification and refinementFrom selected hilly vineyards of the Venezie region. Soft-crushed grapes and free-run must are processed at low temperatures. The clean product is filtered and fermented at 16-18°C. When fermentation is perfect the wine is stored in tanks at a constant low temperature before bottling.

CuriosityResearchers at the University of California, Davis, have determined that Pinot Grigio has a remarkably similar DNA profile to Pinot Noir and that the color difference is derived from a genetic mutation that occurred centuries ago.
