Vinification and Refinement
After de-stalking and pressing, the must is macerated at low temperature in contact with the skins to facilitate the extraction of the aromas. It is then separated and fermented in stainless steel tanks. When fermentation is perfect the wine is stored in tanks at a constant low temperature before bottling.
